In 2016, regulations changed, establishing that the consumption date is at the discretion of the producer. The recommended expiration date is not absolute. The oil should ideally be consumed within 18 months of bottling, as per the old law. Unfiltered oil expires sooner than filtered oil. To check if oil is expired, perform a smell test. Rancid oil has reduced phenols. Extra virgin oil must be well-preserved to avoid deterioration. Store it in a cool, dry place, away from heat and light. High temperatures, oxygen, and light can alter the oil. Bottles should be dark with a tight seal. The ideal storage temperature ranges from 10° to 18°.
What to Do with Expired Oil?
Expired olive oil can still be used if stored correctly and shows no obvious signs of deterioration. It can be used for frying or cooking at high temperatures, in marinades, sauces, or dressings, and for lubricating pots and pans or polishing stainless steel. Its utility depends on storage conditions, appearance, smell, and taste. If it seems in good condition, it can be used in cooking methods that minimize the rancid flavor or aroma. However, if there are doubts about its quality, it’s better not to consume it to avoid health risks. Using fresh, high-quality olive oil is the best precaution for culinary success.
